Bowls and Cups of Comfort

We can never be too sure what Central Ohio weather is going to look like, but the winter season usually leaves folks eager to stay indoors. It’s no wonder that National Hot Tea Day, National Soup Month, and National Pie Day all fall in this season!

National Hot Tea Day was on January 12th. Hot tea is a great pick-me-up on a cold day and can have many benefits. Not to mention, there are so many varieties to choose from!

Matcha is an intensely flavored green tea that’s sure to give you a boost. TSB Marketing Manager Jenny Rainey-Agresti recommends blending matcha powder with chai spice for an excellent tea experience—or add warm milk for a latte!

But one cannot live on tea alone. There’s nothing like a hot bowl of soup on a winter day. Erin Barthelmas from our Accounting department shared this recipe for delicious chicken tortilla soup—and it’s more than enough to feed the whole family!

 

Chicken Tortilla Soup

 

  • 2 -10.75 oz. cans cream of mushroom soup
  • 2- 10.75 oz. cans cream of chicken soup
  • 2 – 10.75 oz. cream of celery soup
  • 2- 10.75 oz. cans cheddar cheese soup
  • 2- 15 oz. cans of chicken broth
  • 1-15 oz. can diced tomatoes
  • 1c. pace picante medium hot salsa
  • 1 – 4.5 oz. diced green chiles
  • 1 medium onion
  • 4 cloves of garlic (minced) or 4 tsp of minced garlic from a jar
  • 1 tsp chili powder
  • Salt and pepper to taste
  • ¼ c. fresh cilantro
  • 4 cooked chicken breasts diced into small pieces
  • 10 flour tortillas
  • 1 ½ c vegetable oil
  • ½ lb. Colby Jack cheese

 

  1. Start by cooking your chicken in an instant pot or slow cooker in advance (or you can use leftover grilled chicken).
  2. In a large stock pot (at least 8 qt.) combine canned items, then add onions, garlic, salt and pepper. Bring all ingredients to a full boil then reduce heat and let simmer for one hour.
  3. Add chicken and cilantro, and let it simmer for another hour.   
  4. Right after adding the chicken, cut tortillas into strips and fry in the oil until golden brown.  
  5. Garnish soup with tortilla strips and Colby Jack cheese.

 

Grab a slice of pie for dessert, and you’re ready to go!
